I had heard of Biota at the SMH Growers Market in Pyrmont where they usually have a stand to promote their restaurant. That had a surprising mix of textures and flavours and we liked it very much, Hen yolk - cooked curds - rye - chickpeas, Lamb breast - dried lactose - fresh and cooked oats - the lamb was cooked and seasoned to perfection, but another incarnation of a milk product didn't add anything interesting for me. The summer menu is available as either a nine-course or six-course affair. There’s a strict ‘domestic only’ policy for the wine list, showcasing local smaller producers and winemakers, which we absolutely adore (support local, we always say!).

I advised the restaurant of my allergies (some shellfish), they dealt with these fine but didn’t listen to my exact allergies and provided me with an alternate dish when they didn’t...More, In 30 years of trips and stays the Biota room takes the prize as the very worst accommodation my wife & I have ever stayed in. The staff provided details for each meal and even the recommended order of consumption for the starter. The bar also serves tapas and snacks including this beautiful "jamon" sitting on the corner of the bar. So to summarise this first experience at Biota, I would say that we were not really convinced by the results in our plates although we were convinced that the concept was aligned with our own "locavore" values and we were concerned that we may have missed the point. It’s an ideal way to enjoy a beautiful Southern Highlands afternoon and throughout the winter months, a special roast will be on offer. Nice flowers, more on these later... My wife had this vegetarian dish: from memory, celery, beetroot and chickpeas and greens.

It has a playground for the kids, and plenty of grass to pull up a picnic rug and enjoy snacks and drinks from the restaurant.

That brings me to one comment: the portions are generally too big for a 7 or 5 course menu.

This wine did very well until we had the duck, where a more robust red would have been a better choice, but obviously this was not part of our brief , so no complaints whatsoever, more an observation. Its diverse and always mouth-watering menu is closely tied to the quirks of Mother Nature, and at any given time you might be eating locally caught marron, fresh seafood from the nearby Illawarra and Shoalhaven districts, or Moss Vale-raised grass fed beef, paired with local seasonal vegetables.

We dined on a long weekend and there was no sommelier to explain the wines, and the rest of the staff did not know the wine list to make...More, Had high expectations as a 2 hatted restaurant and these weren’t met at all.

We had the 5 course degustation meal. The 5 course is enough on portion size. It was a roller coaster culinary ride. And we ended up visiting the brand new "tunnel" where James grows all his herbs, oats etc... And after giving us the grand tour of the pantry where we had a chance to see all the ingredients and been told where they were coming from, and the kitchen where we were privy of the preparation of that beautiful mandarin symphony, it was back to business as usual for James, Joel and the rest of the crew as they had a full house for Saturday lunch... .MagnOur second visit helped us to understand more about the philosophy of the restaurant and the structure of the menu and the objectives of the food being prepared by James and his crew.
